Abstract: Setting up, through the use of a novel electronic nose sensors equipped with a nanowire (Nw), a method that can analyze in a fast, non-destructive and cheap way, the whole coffee chain ( from Farm to Fork ). Starting from the green coffee beans (often affected by fungal contamination) up to the control during and after roasting process.
